【Stem lettuce and five spice peanuts salad】

Serves: 5 servings
1) 3 stem lettuce 780g (500g without skin), ¾ tsp salt;
2) ½ cup five spice peanuts (cooking direction: 1 package peanuts (300g) rinse with water, in a sauce pot with 2 cup cold, ¾ tsp salt, 1 anise star, 1 clove, ½ tsp ground five spice bring to boil and then simmer for 1 hour. );
3) 1 tbsp home made chili oil, 2 tsp freshly minced garlic, 1 tbsp freshly chopped green onion;
4) 1/4 tsp sugar, 1/6 tsp chicken broth mix, 2 tsp balsamic vinegar or dark vinegar;
5) 1 tspsesame oil;
6) 1 tbsp sesame seeds.
1: Peel off the skin of the stem lettuce (Picture 1), rinse and then cut into matchstick-sized strips (Picture 2). Pour boiling water over the stem lettuce strips and drain well (Picture 3). Place them in a clean bowl, add ¾ tsp salt, mix well and set aside for 10 minutes (Picture 4) then discard excess water.
2: A small pot on medium heat, roast sesame seeds to golden, set aside (Picture 5).
3: Add 1 tbsp chili oil to the small pot, medium heat, sauté the minced garlic and chopped green onion for a minute (Picture 6). Remove from heat and transfer to stem lettuce strips bowl. Add five spice peanuts, roasted sesame seeds and all ingredients of Ingredient 4-5).
4: toss to coat well and serve.
