1149 糟毛豆

用料:

1:毛豆500克。

2:盐1茶匙,水3杯。

3:盐2茶匙,水3杯,鸡粉1/4茶匙,花椒粉1/3茶匙,香糟2大匙,绍酒3大匙。

做法:
只有冰冻毛豆,毛豆翦去两角,洗净沥水(图A)。中号锅,加所有2料和毛豆,置炉上开大火煮滚,调中火不要盖盖煮5分钟(图B),沥水备用。

2103 糟毛豆

另起锅放入3料里的盐,水和花椒粉煮滚,离火拌入剩余3料(图D),过滤去渣(图D)留汁,汁和煮好毛豆放入密闭盒里(图E)冰箱冰3小时,即可。

    毛毛妈:我没有香糟,可以用鼎记的糟卤代替香糟和酒吗?按怎样的比例替换?谢谢
