醋熘鱼块


醋熘鱼块

去华人超市,看到碧古鱼非常新鲜,买了一大条,一批两半,一半醋熘,一半做熏鱼。自从一年多前买了Gastrolux 的不沾锅,家里已很少起油锅炸东西了。都是用这个锅放点油煎,一是不起多少油烟,用油量少也一样可以作出美味。

醋熘鱼块1 醋熘鱼块

用料:

1:碧古鱼半片600克,洗净沥水切宽2厘米块,加生抽酱油2大匙,绍酒1大匙,糖1/2茶匙,拌匀冰箱腌2小时,间中翻翻。

2:中筋面粉2大匙,生粉2大匙拌匀。

3:镇江香醋3大匙,糖2大匙,生抽酱油2大匙,盐1/4茶匙,水1/3杯。

4:生粉1茶匙,水2大匙拌匀。

5:菜油4大匙,葱花1大匙,姜末1茶匙,蒜蓉1大匙。

做法:
不沾锅
放油3大匙,置炉上开大火,将腌好的鱼块沥去多余的汁,拌上2料,一块块放入油锅里(图A),煎至焦黄捞出(图B),看看不用油炸,一样煎出漂亮的鱼块。原锅放菜油1置炉上开中火,放入葱花姜末和蒜蓉炒香后,放入3和4料煮滚(图C),放入煎好的鱼块兜匀,煮2分钟至汁浓出锅。

    毛毛妈:你好!我想问一下,什么叫碧古鱼?看你写的是在中国超市买的?这种鱼有点像中国的什么鱼?很想买点鱼,但西人超市都是冰冻的鱼块,常常吃龙利鱼,想换点别的鱼吃吃,谢谢指导.
