风味香辣凉粉

炎热夏天，来一盘风味香辣凉粉吧。
用料:
1：纯绿豆淀粉1/3杯。水2又1/3杯，搅拌均匀。
2：橄榄油2茶匙，蒜末2茶匙，葱花1大匙，姜末1茶匙，盐1/2茶匙，糖1/2茶匙，鸡粉1/4茶匙，万字牌生抽酱油2大匙，风味香辣酱1大匙（风味香辣酱做法见风味香辣酱。
3：菱粉1/2茶匙加水1大匙拌匀，香油1大匙。
做法：
纯绿豆淀粉是这样的（图A）。中号饭锅，置炉上开大中火，内放1料（图B），边搅拌边煮开至半透明（图C），离火冷凉。凉透的凉粉，用刀把周边划一圈，倒出切细长条放入碗内。
不粘锅置炉上开中小火，放入2料里的油，炒香葱花，姜末和蒜末（图D），依次放入剩余2料，煮滚后加3料生粉水（图E），搅拌煮至微滚，离火放入香油拌匀，将汁浇到凉粉上即可。
