【Chicken Breast and Egg Stir Fry】
A simple, fast and delicious dish, working mom/dad will like to cook this one for her/his family.

Serves: 5 servings
1) 460g chicken breast, 1/2 tsp salt, 2 tsp corn starch, 2 tbsp cold water, 1/8 tsp ground white pepper;
2) 2 extra large eggs, 1/3 tsp salt, 1/6 tsp chicken broth mix , 2 tsp water;
3) 2 tbsp olive oil, 2 tbsp green onion;
4) 1 tsp sesame oil.
1: Slice chicken breast into thin (about 1 mm) slices (Picture 1), add all the rest of ingredients of Ingredient 2) (Picture 2) and massage the meat with your fingers for 1-2 minutes (Picture 3), set aside for 15 minutes.
2: Place eggs and all ingredients listed under Ingredient 2) in a bowl (Picture 4). Beat well with a fork.
3: Heat 2 tbsp olive oil in a non-stick sauté pan over high heat. Add sliced meat (Picture 5), stir and cook for 60 seconds. Add chopped green onion, stir and cook for 10 seconds (Picture 6).
4: Pour in beaten eggs (Picture 7), when you see the bottom starts solidifing, gently stir a few times until eggs just cooked (Picture 8).
5: Pour in 1 tsp sesame oil, stir to mix. Transfer to a serving plate and serve immediately with some steamed rice.
