豉椒炒青口

香辣鲜美。
用料:
1：新鲜青口850克。
2：橄榄油1.5大匙，豆豉1.5大匙斩蓉，红尖辣椒丁2大匙，姜8克切小片，蒜2瓣切片，洋葱25克切小块。
3：绍酒1大匙，胡椒粉1/4茶匙，盐1/3茶匙，糖1/3茶匙，蚝油1大匙，葱1根切段。
4：生粉1.5茶匙，水3大匙拌匀。
做法：
青口放入加2勺盐的水里（图A）泡1小时，用刷子刷干净（图B）。大锅放大半锅水，置炉上开大火，煮滚下青口（图C）煮至开口，沥水，每只青口去掉一半壳，除去污草（图D）。
炒锅，置炉上开大中火，加1.5大匙橄榄油，放入豆豉及2料里的辣椒，姜片，蒜片，洋葱炒香（图E），然后煮好的青口（图F），翻炒几下，接着依次下3料（图G），最后倒入生粉水兜匀出锅（图H）。
