青蒜炒鱼片

发现这种洋菜(Leek),有点像我们的蒜苗,炒肉炒鱼片都很好吃。


青蒜炒鱼片1 青蒜炒鱼片

用料:
1:冰冻龙利或金狮斑球鱼柳400克,洗净沥水切稍厚片,加1/4茶匙盐,生粉1大匙,香油1茶匙,白胡椒粉1/4茶匙,拌匀腌20分钟。

2:青蒜(Leek)一颗,165克,洗净切丝。

3:橄榄油3大匙,豆豉1大匙斩蓉,蒜末1大匙,绍酒1大匙,糖1/3茶匙,盐1/4茶匙,老干妈油辣椒2茶匙,水2大匙。

做法:

拌上调味的鱼片如是能保湿放冰箱里过夜(图A),鱼肉会更嫩滑。不沾锅放橄榄油2大匙,置炉上开大中火,放入鱼片(图B)划熟捞出(图C)

原锅里再加油1大匙,炒香豆豉和蒜茸(图D),放入青蒜丝翻炒几下(图E),接着倒入炒好的鱼片,喷入绍酒及放入剩余3料,兜炒均匀(图F),即可出锅食用。

    请问毛毛妈你是在哪里买的鱼呢?是新鲜活鱼还是冷冻鱼呢?我在美国一个小城市,很难买到新鲜活鱼。
