【AirGo:里脊肉饼】

用料:
面团:
1:不烫手的温水3/4杯+3大匙(225克),糖1/4茶匙,快速发酵粉(Fast Rising Yeast) 1.5茶匙,搅拌均匀,静置5分钟;
2:中筋面粉(All purpose flour) 2杯(320克,面没筛过,是从面粉袋里直接舀的), 泡打粉1茶匙, 拌匀;
3:牛油果油 或其他的油2×1大匙。
馅:
4:小里脊肉1条525g;
5:红葱头4个(185克), 油1茶匙, 葱2根;
6:香油 1大匙, 头抽酱油1大匙, 老抽酱油1大匙, 生抽酱油1大匙, 蚝油1大匙, 盐1/4茶匙, 黑胡椒粉1/4茶匙, 鸡粉1/4茶匙, 生粉或玉米淀粉1.5茶匙, 水2大匙;
其他材料:
7: 牛油果油或其他油2大匙.
注:1大匙=1tbsp=15毫升,1茶匙=tsp=5毫升,1杯=1cup=240毫升。
以上材料做16个里脊肉饼。
做法:
1、面团:杯子里放入1料, 拌匀静置5分钟 (图1). 倒入2料面粉, 用筷子搅拌成大块面团, 放入1大匙油, 揉几下成面团(图2)。盖上盖或罩上保鲜膜,放在暖和的地方保温发酵, 大约60-90分钟。
2、馅:红葱头剥去老皮水冲洗后切细丁. 葱也去根洗净切葱花. 红葱头用1茶匙油,用AirGo的空气炸锅功能, 400F炸8分钟(图3)。里脊肉洗净切小丁, 用手抓捏几分钟, 这样肉会嫩. 将肉丁及所有5-6料放一盆里(图4), 搅拌均匀待用.
3、等到面团发至原来的两倍大(图5)。案板和手上涂些油,将发好的面团揉成长条, 擀开涂1大匙油(图6), 卷起来(图7). 分成16个剂子. 让面团松弛10分钟, 每个擀成12厘米的圆饼, 放上2大匙肉馅(图8),收口包好(图9), 稍微压扁. 先做好8个肉饼.
4、【AirGo】插上电源,用“Function”选“Crepe/Naan”然后选择385F及13分钟,点“Start”预热。1大匙牛油果油刷匀, 放入8个饼(图10), 盖上锅盖,让程序继续。煎饼的过程再做好剩下的饼.
5、烤大约8-9分钟后或听到翻转提示, 打开盖翻, 表面刷油(图11), 翻转一面(图12), 盖上盖继续。程序完成后, 取出, 稍冷即可食用. 同样煎好另外8个.
Tips: 肉饼一次吃不完的话,可以放冰箱或冰冻室存放。吃的时候在微波炉里热15-20秒后,再放面包炉(Toaster)里用低热档烤一下。
