【Steamed meat ball in egg custard】

This is a nutritious that kids and elderly love. The steamed egg and meat ball are tender and smooth, well worth the effort. I used InstantPot to make this dish, pretty good.

Level: medium
Serves: 3 serving
Ingredients:
1) 150g extra lean ground pork;
2) 1.5 tbsp freshly chopped green onions, 1/2 tsp freshly minced ginger, 1.5 tsp light soy sauce, 1.5 tsp premium soy sauce, 1 tsp corn starch, 1/6 tsp salt, 1/8 tsp white ground pepper, 1 tsp sesame seed, 1/8 tsp chicken broth mix, 2 tbsp cold water;
3) 1 extra large egg;
4) 1/3 tsp salt, 1/8 tsp chicken broth mix, 120 ml luck warm water (about ½ cup);
5) 1/2 tsp sesame oil, 1 tsp freshly chopped green onion, 1tsp premium soy sauce for garnish.
Directions:
1: Combine all ingredients of Ingredient 1) to 2) in a bowl (Picture 1-2). Stir in one direction for 3 minutes with a pair of chopsticks, until the mixture becomes sticky.
2: Place the steam rack inside the InstantPot . Fill water to the 1-cup mark. Place a deep dish on the steam rack. Dip a spoon in cold water, then spoon out about 2 tsp meat mixture and shape it in your palm until it forms a ball (Picture 3) and place on the plate (Picture 4).
3: Crack an egg into a container, add 1/3 teaspoon salt and 1/8 teaspoon chicken broth mix, beat with a pair of chopsticks. Slowly add 120 ml lukewarm water and mix well (Picture 5). Pour egg mixture to the shallow bowl (Picture 6), and cover with a flat plate (Picture 7).
4: Cover the lid of InstantPot and make sure that the pressure valve is at the Seal position. Press the “Steam” button and set 10 minutes of cooking time (Picture 8).
5: When the program is done, wait for another 3-5 minutes. Slowly release the pressure then open the lid. Sprinkle chopped green onion, 1 tsp premium soy sauce and add ½ teaspoon sesame oil before serving.
