【Sweet Glutinous Rice Pancakes】

Ingredients:
1: ½ cup Roasted cashew nuts (110g), 1tbsp flour, 1 tbsp sugar (14g), 2 tbsp honey (30g);
2: 1 cup+1tbsp glutinous rice flour (140g), ½ cup+1tsp lukewarm water (125g);
3: ½ white sesame seeds;
4: 3 tbsp corn oil.
Directions:
1: Place roasted cashew nuts in a plastic bag, seal and roll with a rolling pin (Picture 1) to crush them. Transfer the crushed nuts to a medium size bowl. Add the rest of ingredients and mix to combine well (Picture 2).
2: Place glutinous rice flour in a medium size bowl. Add warm water to form dough (Picture3). Divide dough into 10 equal portions. Take a piece, indent with your thumb and shape it into a deep bowl. Spoon in 1/10 of the filling (Picture 4). Carefully work the dough up to cover the filling, seal the opening, and gently roll into a ball with your palms.
3: Dip in sesame seeds and cover evenly (Picture 5) and roll with your hands a few times and let the sesame seeds stick well on the ball, gently press down (Picture 6). Repeat for the rest ingredients.
4: Plugin the Ropot, press Power button to preheat the cooker. Add 3 tbsp oil and arrange glutinous rice pancakes (Picture 7) inside the pot, close the lid, press Function to select Panfry, program starts automatically.
5: When it is done, open the lid, turn over the pancakes (Picture 8). Close the lid, press Function to select Panfry, after 3 seconds count down finishes, press – sign and decrease time to 3 minutes,
6: When it is done, open the lid, take out cooked pancakes and drain oil on paper towel before serving.
