【Braised daikon and carrot in black bean chili and oyster sauce】

You could substitute daikon with carrots. This is very healthy and delicious dish, my family loves it.

Serves: 6 servings
Ingredients:
1) 1 long daikon (950g), 1 carrot (100g);
2) 25 dried scallops;
3) 1.5 tbsp avocado oil or other cooking oil, 2 tbsp freshly chopped green onion, 2 tsp freshly minced garlic, 1.5 tbsp Lee Kum kee black bean chili sauce;
4) 1/4 tsp salt, 1 tbsp premium soy sauce, 1/4 tsp chicken broth mix, 2 tbsp Lee Kum kee oyster sauce;
5: 1 tsp sesame oil.
Directions:
1: Ahead of time, soak dried scallops in cold water for a couple of hours (Picture 1) until soft, rinse with water and drain. Peel off skin of daikon and carrot, rinse and drain. Cut daikon and carrot into 0.3 cm disc and then cut into 4 equal-size triangles (Picture 2-3).
2: A deep sauté pan or wok on medium-high heat, add 1.5 tbsp oil, sauté chopped green onion, sliced garlic and 1 tbsp black bean chili sauce for 30 seconds (Picture 4). Add scallops and sauté for another 30 seconds (Picture 5).
3: Add sliced carrots, sauté for 1 minute (Picture 6). Then add all ingredients of Ingredient 4), stir to mix (Picture 7). Cover with the lid and simmer for 8 minutes, occasionally stir to mix.
4: Add 1 tsp sesame oil and stir to mix. Transfer to a serving plate and serve warm.
