【四季豆排骨焖面】

很久没有做焖面了,毛毛想吃,做了四季豆排骨焖面,非常香。
用料:
1:肋排1100克,切成条,洗净沥水;
2:橄榄油1.5大匙,葱2根切段,姜切片3片,八角1粒,丁香1粒,
3:料酒1大匙,万字牌生抽酱油3大匙,老抽酱油2大匙,糖1茶匙,十三香粉1/4茶匙;
4:四季豆750克,摘去头尾,洗净切两段备用,盐2/3茶匙;
5:中筋面粉(All purpose flour)2杯320克,加盐1/3茶匙拌匀。
6:鸡蛋一只打散对水到2/3杯,160克。
注:1杯=240毫升,面是从面袋里直接舀的,没过筛。1大匙=15毫升,1茶匙=5毫升。
做法:
1、电压力锅内胆里,放1.5大匙油,选【Sauté】高档,放入2料里的葱,姜,八角,丁香炒香(图1),然后放入排骨翻炒至肉变色1(图1)。
2、依次放入所有3料,盖上盖子,排气阀放置密封位置,选【手动】档20分钟,启动程序。
3、乘烧排骨空档,盆内放入2杯面粉及盐1/3茶匙拌匀,加入6料(图3)揉成硬面团(图4)。然后将面团分成4小块,每块依次揉成长条,用压面机压成面片,再切成细面(图5),间中撒点干面粉防粘待用。
4、电压力锅完成程序后,冷却2分钟,放气减压打开盖子。放入四季豆和盐2/3茶匙拌匀。盖上盖子,排气阀放置密封位置,选【手动】档8分钟,启动程序。
5、程序再次完成后,冷却2分钟,放气减压打开盖子。放上面条(图6),盖上盖子,排气阀放置密封位置,选【手动】档5分钟,启动程序。
6、最后程序完成后,冷却2分钟,放气减压打开盖子,将面和菜拌匀即可。
