【Sweet-scented Osmanthus Rice Cake】

Ever heard of or tried any dessert made with some osmanthus flowers? Osmanthus is a native plant in warm temperate zone. Its small yellow flowers produce very strong and sweet fragrance, which is well loved by many. Chinese people like to make tea and desserts with these tiny dried flowers. You may find dried osmanthus flowers in Asian stores or Chinese herbal shops.

Serves: 12 servings
Ingredients:
1) 1.25 cup glutinous rice flour (160g), 3/4 cup rice flour (96g), ½ cup sugar (105g);
2) 1 cup water (235g), 1.5 tbs corn oil (20g);
3) 1 tbsp dried osmanthus flower.
Directions:
1: Place all ingredients of Ingredients 1) to 3) in a medium sized microwave safe bowl (Picture 1). Stir with a spoon until mixed well (Picture 2). Microwave on high for 2 minute and stir (Picture 3). Microwave again for a minute and stir. Repeat until the dough turns transparent and fully cooked (Picture 4).
2: Cover the bowl with plastic wrap and set aside for 15 minutes. On a clean surface, place a large piece of plastic wrap and transfer cooked dough on one end. Lift the other half of wrap to cover the dough and knead it (Picture 5). Open the wrap, fold the dough, cover with the wrap and knead. Repeat a few more times until the dough is well mixed and smooth.
3: Divide the dough in half. Cover each piece with plastic wrap and shape into a 3 cm diameter log. Rewrap the logs (Picture 6). Chill in the fridge for 2-4 hours.
4: Remove the plastic wrap and cut into 1 cm thick slices before serving.
