【白芦笋炒肉片】

买菜看到白芦笋很新鲜,买了一捆,做了白芦笋炒肉片,白芦笋很嫩,好吃。
用料:
1:里脊肉1片100克;盐1/3茶匙,水1.5大匙,生粉2茶匙;
2:红柿子椒半个75克;
3;白芦笋400克,洗净备用;
4:橄榄油2大匙,葱花1大匙,蒜蓉2茶匙,豆豉1茶匙;
5:绍酒1茶匙,糖1/2茶匙,盐1/3茶匙,白胡椒1/6茶匙,李锦记旧庄蚝油1.5大匙;
6:香油1/2茶匙。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、里脊肉切薄片,放入剩余1料,抓捏均匀,最好冰箱保湿过夜,当天做的话,静置20分钟。
2、红柿子椒,洗净切三角块备用。白芦笋用刨刀削去外皮,切寸段(图1)备用。
3、不粘锅,置炉上开大中火,放1.5大匙橄榄油,下肉片(图2) 翻炒至9成熟捞出备用。
4、原锅大火,再放0.5大匙油,炒香剩余4料里的葱花,蒜蓉和姜丝,接着放入芦笋和红柿子椒块翻炒几下,然后依次放入剩余5料,翻炒1-2分钟,接着放入炒好的肉片兜匀后,最后放入6料,轻轻兜匀出锅。
