MM也做过,不过还是写下偶做的方法。

用料:
1冰冻龙利或金狮斑球鱼柳300克,洗净沥水切细粒斩成
22/3茶匙,绍酒2茶匙,生粉1大匙,鸡精1/4茶匙,白胡椒粉1/8
3:蛋清两个。
4:葱花2大匙,姜末1/2茶匙。
5:水4杯,1/2茶匙,白胡椒粉1/8茶,鸡精1/4茶匙,葱花1茶匙。

做法:

鸡蛋清放干净小碗,用一手动打蛋器打至发。取一盆,放入所有的1,2和4料拌匀,用双筷子顺一个方向搅拌至馅上劲,倒入打发蛋白,再搅拌至馅粘稠。

2122 鱼丸

小锅放水4杯,盐1/2茶匙置炉上开大火,水快开时调小火(这是保证鱼丸嫩滑的关键),左手沾上点水(这样馅不沾手),用一小勺沾点水取一份鱼丸馅,反复在左手掌和勺之间搓成直径1.2厘米丸子后入锅内,如此做好剩余的丸子,盖上盖小火焖5分钟离火,撒上剩余的5料即可。

咬一口鲜的很。
