【菠菜蒸饺】

用料:
饺馅：
1：去根菠菜1捆400克，洗净；
2：去壳熟冰冻虾8只，冲洗沥水切小小丁；
3：葱1根切碎，香油1大匙
4：鸡蛋2只，加盐1/3茶匙打散备用，橄榄油1大匙；
5：生粉1大匙，盐1茶匙，鸡粉1/4茶匙，白胡椒1/4茶匙，糖1/4茶匙；
饺皮：
6：中筋面粉(All purpose flour) 480克（3杯），开水325克（1.5杯），玉米油1.5茶匙。
注：1大匙=15毫升=1 Tablespoon，1茶匙=5毫升=1 Teaspoon，1杯=240毫升。
做法：
饺馅：
1、菠菜洗净后开水里烫1分钟，沥水冲冷水（图1）。切小丁后，稍微捏去多余的水放一盆里。同时放入切好的虾肉及所有3料拌匀（图2）。
2、不粘锅，置炉上开大中火，放入4料里的油，锅热后倒入打散的鸡蛋，煎成蛋皮（图3），稍冷切碎丁，放入菠菜里，加入所有剩余5料拌匀为饺馅（图4）。
饺皮：
3、将6料中的水缓慢倒入面粉中且用筷子不断搅拌成面絮状个（图5），稍冷和成软面团，然后加1.5茶匙油揉到光滑（图6），保湿静置15分钟。
饺子：
4、将面团稍揉下，分成3大块，取一块，其他的注意保湿。将面团揉成1.5厘米直径的长条后切成10等份，每份擀成薄皮（图7），放上1-1.5大匙馅料，对折先捏拢中间，然后捏紧两边成饺子。放入铺了考盘纸的蒸笼里（图8）。
5、烧开半锅水，放上蒸笼里，大火蒸10分钟即可。
