Healthy and Easy【Eggplants with Garlic Sauce】

Serves: 4-6 servings
Ingredients:
1) 3 eggplants, 500g;
2) 1 tbsp sesame seeds;
3) 1/2 tsp salt, 1/6 tsp chicken broth mix, 2 tsp sesame oil ;
4) 1 tbsp olive oil , 1/2 chili peper diced, 5 cloves of garlic minced, 1 tbs freshly minced green onion.
Directions:
1: Remove stems of the eggplant, rinse and cut in half (Picture 1). Boil water in a large pot. Put in eggplants and hold down with a plate (Picture 2). Cook on medium heat for 6 minutes and rinse with cold water (Picture 3). Cut into 1 inch long pieces and place in a mixing bowl.
2: Non-stick frying pan on medium heat, add in 1 tbsp sesame seeds, stir and cook until light brown (Picture 4).
4: Gently toss eggplant pieces with a spoon to coat with sauce. Chill for a couple of hours in the fridge before serving.
