【Meat Stuffed Tofu Puffs】

Tofu puffs are deep fried cubed pieces of bean curd found in Asian supermarkets in the refrigerated section. This is one of many ways that tofu can be used in Chinese cuisine. Deep frying makes them very chewy and absorbent. These tofu puffs are light and spongy with hollow centers, ideal for stuffing.

Serves: 6 servings
Ingredients:
1) 150g extra lean ground pork;
2) 1 green onion finely chopped, 1/2 tsp freshly minced ginger, 1/3 tsp salt, 2 tsp corn starch, 1/8 tsp white pepper powder, 1 tsp sesame oil, 2 tbsp water;
3) 1 package tofu puffs 140g;
4) 1 tbsp olive oil, 2-3 slices fresh ginger, 1.5 tbsp freshly chopped green onion;
5) 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp Yummy House soy sauce, 1 tsp sugar, 1/6 tsp chicken broth mix, 1 cup water;
6) 1 tsp sesame oil.
Directions:
1: Combine all ingredients of Ingredient 1) to 2) in a bowl (Picture 1). Stir in one direction with a pair of chopsticks for 3 minutes until the mixture becomes sticky (Picture 2).
2: Poke a hole through the middle of the tofu puffs with your index finger, and stuff in about 1.5 tsp meat filling (Picture 3).
4: Add all ingredients of Ingredient 5) (Picture 6). Reduce heat to medium, cover and simmer for 10 minutes. Open the lid and continue cooking until very little liquid is left. Add 1 tsp sesame oil, mix well then transfer to a serving plate. Serve with rice.
