【豆芽排骨焖面】

这个豆芽排骨焖面也是小时候难得吃上一次的美味,大家一定要试试。
用料:
1:肋排1000克,切成条,洗净沥水。
2:黄豆芽650克,水冲洗沥水。
3:葱2根切段,姜切片3片,八角1粒,丁香1粒,料酒1大匙,万字牌生抽酱油4大匙,老抽酱油2大匙,糖2茶匙,盐1/2茶匙1/3茶匙十三香粉;
4:中筋面粉(All purpose flour)2杯320克,加盐1/3茶匙拌匀。
5:鸡蛋一只打散对水到2/3杯,160克。
注:1杯=240毫升,面是从面袋里直接舀的,没过筛。1大匙=15毫升,1茶匙=5毫升。
做法:
1、大锅放大半锅水,置炉上大火烧开,下豆芽烫2分钟(图1)捞出。接着下排骨烫两分钟捞出备用。
2、将排骨倒入电压力锅内胆里,放上3料拌匀(图2),烫好的豆芽放排骨上面,盖上盖子,排气阀放置密封位置,选【手动】档28分钟,启动程序。
3、乘烧排骨空档,盆内放入2杯面粉及盐1/3茶匙拌匀,加入5料揉成硬面团(图3)。盖上保鲜膜醒10分钟,然后将面团分成4小块,每块依次揉成长条,用压面机压成面片,再切成细面(图4),间中撒点干面粉防粘。
4、电压力锅完成程序后,冷却2分钟,放气减压打开盖子。将排骨和豆芽拌匀,放上面条(图5),盖上盖子,排气阀放置密封位置,选【手动】档5分钟,启动程序。
5、电压力锅完成程序后,冷却2分钟,放气减压打开盖子。将面条与排骨和豆芽再次拌匀(图6),盖上盖子,排气阀放置密封位置,选【手动】档2分钟,再次启动程序。
6、电压力锅完成程序后,冷却2分钟,放气减压打开盖子,面条盛小碗里,爱吃辣的放点香辣酱,就可以开吃了。
