【香辣凉拌鸡】

我们这小村,不容易买到走地鸡。这边西人店可以买到小母鸡,味道也很鲜美。
用料:
1:小母鸡一只750克(Cornish hen),葱一条切段,姜2-3片;
2:橄榄油1大匙,蒜茸1大匙,葱花1大匙,姜末2茶匙,十三香粉1/3茶匙,甜面酱2茶匙;
3:1大匙风味香辣酱,糖1茶匙,镇江香醋2茶匙,鸡精1/4茶匙,盐1/2茶匙,万字牌生抽酱油1大匙,香油2茶匙,辣椒油1大匙,冷开水1大匙。
4:香菜1颗洗净切小粒。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、小母鸡去掉多余油和1料里的葱姜,放入 快煲电压力锅内锅里,加水到7杯线,加盖选手动档(Manual),3分钟,启动升序。
3、煮鸡的空挡,做香辣汁。小号不粘锅置炉上开大火,加油1大匙,炒香蒜茸,葱花和姜末(图3),然后放入剩余2料炒半分钟(图4),关火。放入3-4料拌匀成汁待用(图5)。
4、快煲电压力锅完成程序后,等15分钟,放气减压打开盖,滗去水,将鸡放入冰水中,冰箱冰1小时,斩块浇上香辣汁即可上桌了。
