【麻油鸡块】

上班族们可以试试这个菜。头一天晚上把鸡肉切块,拌上腌料放冰箱过夜。第二天下了班后,几分钟就可以炒出嫩滑入味的菜上桌。
用料:
1:去皮去骨鸡腿肉550克(Costco有卖),老抽酱油1大匙,生粉2茶匙,盐1/2茶匙,白胡椒粉1/6茶匙,水2大匙;
2:八角香油1.5大匙,姜3-4片,葱花1大匙;
3:厨用酒或米酒2大匙,头抽酱油1大匙,糖1/4茶匙,盐1/4茶匙,水2大匙;
4:香油1茶匙,炒熟白芝麻1茶匙。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、前一天晚上将鸡肉切块,加所有剩余1料,抓捏均匀(图1),保湿冰箱过夜。这样鸡肉会很嫩。
2、不粘锅,加1.5大匙香油,置炉上开大火,炒香剩余2料(图2),下鸡肉翻炒几下(图3)。
3、依次加入3料后炒至汁浓,最后下4料的芝麻和香油(图4),兜匀出锅。
