用料:

1:鸡腿6个600克,洗净沥水,去骨切小块。

2:绍酒1大匙,万字牌生抽酱油1大匙,盐1/4茶匙,生粉1大匙,糖1/2茶匙,香油1茶匙,生粉1大匙。

3:熟杏仁20粒。

4:橄榄油2大匙,葱2条洗净切段,鲜香蒜蓉1大匙,花椒粉1/2茶匙,干辣椒6个,台湾产富记辣豆瓣酱2茶匙,万字牌生抽酱油1茶匙,金兰老抽1茶匙,糖1/2茶匙。

5:生粉1.5茶匙加水1大匙拌匀成生粉水,香油1茶匙。

注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。

 

做法:

鸡肉块拌上2料密闭冰箱过夜(图A)。杏仁放一塑料袋里(图B),用擀面杖稍微砸碎(图C)。 不粘锅,置炉上开大火,放橄榄油2大匙,直接放入一半的葱段,蒜蓉,花椒粉,干辣椒和辣豆瓣酱(图D)炒香,放入腌好的鸡肉块,翻炒至8成熟(图E)。

调中火,放入剩余4料炒匀,接着放入3料的杏仁碎粒,5料的生粉水,香油和剩余的葱段(图F),炒匀出锅。
