【AirGo-Dried Scallop and Endive Belgian】

Serves: 4 servings
Ingredients:
1) 450 g Belgian endive;
2) 20 dried scallops;
3) 1 tbsp olive oil, 1.5 tbsp fresh chopped green onion, 2 tsp freshly minced garlic, 1tbsp Lee Kum Kee chill black bean sauce;
4) 1.5 tbsp light soy sauce, 1 tbsp premium soy sauce, ¼ tsp white ground pepper, 1/6 tsp chichen broth mix, ¼ cup water;
5). ½ tsp sesame oil.
Directions:
1: Rinse Belgian endive, cut in half lengthwise and then cut quarterly (Picture 1). Ahead of time soak dried scallops in water for a couple of hours and then drain, set aside (Picture 2).
2. Plugin the 【AirGo】cooker, Use “Function” to select the “Air Fryer” program, set temperature to 400F and time to 7 min. press “start”” to initiate the program.
3: After preheat, open the lid, add sliced Belgian endive to the pot evenly (Picture 3). Close the lid, and let the program continue. When program progressed 4 minutes, open the lid and stir a few times. Close the lid, and let the program finish. Take out cooked Belgian endive and set aside.
4: Use “Function” to select the “Base heat” program, set temperature to 400F and time to 6 min. press “start”” to initiate the program. Add all ingredients of Ingredient 3) and soaked scallops (Picture 4), stir a few times. Close the lid and cook for 1 minute.
5: Open the lid and add all ingredients of Ingredient 4), stir a few times and close the lid and let it cook for 3-4 minutes.
6: Add cooked Belgian endive (Picture 5), stir a few times, and then add ½ tsp sesame oil (Picture 6), stir to mix. Transfer cooked Belgian endive to a serving bowl, and serve warm.
