【香蕉蓝莓干麥芬】

这个蓝莓干香蕉麦芬,简单易做,味道也好,大家可以试试。
用料:
1:熟香蕉1.5根(除掉蕉皮后175克),糖1/3杯+1大匙(87克),1/2杯希腊酸奶(120克);
2:牛油3大匙(45克)微波熔化,鸡蛋2个;
3:香草香精1茶匙;
4:中筋面粉1又1/3杯(210克),泡打粉1茶匙,苏打粉1/3茶匙;
5:蓝莓干3/4杯(135克);
6:2大匙糖,2茶匙肉桂粉,拌匀。
以上材料做12个麦芬。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、预热烤箱350F/175摄氏度。将所有1料放入一盆里(图1),用打蛋器(handheld mixer)高速打2-3分钟到蓬松。放入2料牛油和鸡蛋(图2),中速打匀。最后放入1茶匙香草香精(图3)再打匀。
2、所有4料充分混合均匀后,倒入蛋糊里(图4),用橡皮刀拌至还可以看到干面粉的程度(图5)。加入3/4杯蓝莓干(图6)拌匀即可,千万不要过度搅拌(图7)。
3、 将12个纸烤杯放在麦芬烤模里,用勺子将面糊均匀分到纸烤杯里(图8),上面均匀撒上6料的肉桂糖。放入预热至350F/175摄氏的烤箱内,烤22-25分钟左右至麦芬表面微黄,高高鼓起,插入牙签拿出干净即可。
4、 麦芬放入一盒子里冷凉至室温再吃。
