【Banana and Dried Blueberry Muffins】

This is a delicious and healthy muffin recipe, ideal for breakfast and snack.

Ingredients:
1: 1.5 ripe bananas, mashed (net weight 230g), 1/3 cup + 1 tbsp sugar (87g), ½ cup Greek yogurt (120g);
2: 3 tbsp butter (45g) melted in microwave oven, 2 extra-large eggs;
3: 1 tsp vanilla extract;
4: 1 & 1/3 cups all purpose flour (210 g), 1 tsp baking powder, 1/3 tsp baking soda;
5: ¾ cup dried blueberries;
6: 2 tbsp sugar, 2 tsp cinnamon, mixed well.
Directions:
Preheat oven at 350F/175C.
1: Add all ingredients of Ingredient 1) in a medium bowl (Picture 1). Beat with a handheld mixer at high speed for 2-3 minutes. Add melted butter and eggs (Picture 2) and beat at medium speed until mixed. Add 1 tsp vanilla extract (Picture 3) and beat well.
2: Measure all ingredients of Ingredient 4) into a mixing bowl and thoroughly mix. Then pour into the batter (Picture 4). Mix with a spatula to almost combine but still can see some dry flour (Picture 5). Add dried blueberries (Picture 6) and mix to combine (Picture 7). Do not over mix.
3: Scoop the batter into a muffin tin that is lined with 12 cupcake cups (Picture 8). Sprinkle cinnamon and sugar mixture on top.
4: Bake in the preheated oven at 350F/175C for 22-25 minutes until inserted toothpick comes out clean. Cool to room temperature before serving.
