【Lemon Cream Cheese Cookies】

The recipe is adapted from Food52.com but with less sugar. Lemon cream cheese cookies are soft and chewy on the top, crispy on the bottom. They are delicious, also very easy to make. You got to try it.

Yield: 24 servings
Ingredients:
1: 1/2 cup butter (120g) softened, 3/4 cup sugar (155g), 1/3 cup Kraft PHILADELPHIA cream cheese (80g);
2: 1 tsp vanilla extract, 1 tsp lemon zest from one lemon, 1tsp lemon juice;
3: 1 cup all purpose flour (160g), 1/3 tsp salt.
Directions:
1: Preheat oven at 350F/176C. Place all ingredients of Ingredient 1) in a bowl (Picture 1) and beat with a handheld mixer at high speed until fluffy, about 3-4 minutes (Picture 2). Add vanilla extract, lemon zest and lemon juice of Ingredient 2), beat at low to mix (Picture 3).
2: Place all ingredients of Ingredient 3) in a bowl and mix well with a fork. Add the flour mixture to the butter bowl (Picture 4), beat at medium speed to mix.
4: Bake at preheated oven at 350F/176C for about 14 minutes until the edges turn golden brown.
5: Cool the cookies for a couple of minutes on the baking sheet, then carefully transfer them to a wire rack to cool completely.
