Easy and Delicious【Stir Fried Egg with Green Onion】

This easy, quick and delicious dish of stir fried egg with green onion was one of my childhood favors. It goes well with steamed Chinese buns, congee, or Chinese flatbread. You can put it on toast, too. Yummy! You can try this Chinese style scrambled egg at home in just a few minutes.
Prepare time: 3 minutes
Cook time: 5 minutes
Level: Easy
Serves: 2 servings
Ingredients:
1) 1 green onion, rinsed;
2) 2 extra large eggs;
3) 1 tbsp water, 1/3 tsp salt, 1/8 tsp white pepper, 1/8 tsp chicken broth mix.
4) 1 tbsp olive oil , 1 tsp sesame oil .
Directions:
1: Trim off stem of the green onion. Cut into 1 inch long pieces and then slice then into thin stripes (Picture 1). Place shredded green onion, eggs and all ingredients listed under Ingredient 3) in a bowl (Picture 2). Beat well with a fork (Picture 3).
2: Non-stick frying pan on medium-high heat, add in 1 tbsp olive oil and 1 tsp sesame oil. When oil is hot, add beaten egg (Picture 4).
3: Gentlely stir a few times until egg just solidfied. Remove from heat and transfer to serving plate.

每次做饭前都要研究下毛毛妈厨房。想买您推荐的锅,但怎样才能保护锅呢?炒菜过程中要加水,是凉水还是温水?每次炒完一个菜再炒另一个菜时,用热水还是凉水刷锅?
这个锅不怕大火,我每次做完一个菜都用洗洁精洗干净再做下一个菜。

我的意思是直接用凉水刷锅会不会容易使锅产生形变呢?因为热胀冷缩的缘故,所以我一般是用温水或温开水。不知道这个锅是否也需要注意这个问题?
直接可以冲冷水,我的锅5年多了,底部是平的,一点都不变形。

这个菜我也试了一下,临时没有葱,找了个青椒切成碎丁做替身,味道也很不错。关键是这个方法好,没有提前准备临时也能很快弄个菜出来。
