用料:
1:茄子3条325克,去蒂洗净备用。
2:橄榄油2大匙,盐1/3茶匙,万字牌生抽酱油2茶匙,糖1/2茶匙。
3:红色或橘红色柿子椒25克,切丝。
4:葱花1茶匙,香油1茶匙,鸡粉1/6茶匙。
做法:
茄子滚刀切块(图A),放到水里泡洗一下(图B)。
不粘锅,置炉上开大火,放入橄榄油2大匙,将泡水的茄子沥水(图C)后,放入锅里快速翻炒几下(图D),火稍调小些,放入2料里的盐炒至茄子软身(图E),接着放入剩余2料和柿子椒丝,炒干汁后(图F),放入4料兜抄均匀即可出锅。
