凉拌鸡胗

香辣味浓。
用料:
1:鸡胗700克,洗净沥水。
2:葱1条洗净切段,姜片4片,八角1粒,丁香2粒,水3杯。
3:橄榄油1.5大匙,蒜蓉1大匙,姜末2茶匙,葱花2大匙,剁椒1大匙。
4:煮鸡胗的汁水4大匙,万牌生抽酱油1.5大匙,糖1茶匙,镇江香醋2茶匙,盐1/3茶匙,老干妈油辣椒2茶匙,香油1大匙。
5:香菜1棵洗净切小段。
做法:
中号锅放入鸡胗和所有2料(图A),置炉上开大火煮滚(图B),调中小火焖煮30分钟(图C)后,捞出鸡胗(图D),切片(图E)备用。
不沾锅,加橄榄油1.5大匙,置炉上开大中火,炒香蒜蓉,姜末,葱花和剁椒(图F),离火后加入所有4料拌匀(图G),然后放人切片的鸡胗和香菜(图H)拌匀即可。
