【Taro sausage sticky rice】

Very tasty one pot meal with use InstantPot, for a fast and easy cooking.

Serves: 6 servings
Ingredients:
1) 15 Chinese dried mushrooms, ¼ cup dried scallops, 2 lean Chinese sausage (you can get it in Chinese grocery store;
2) 2 small taro (250g);
3) 2 tbsp freshly chopped green onions;
4) 1.5 cups long grain rice, 1.5 cup glutinous rice;
5) 1 tbspavacoda oil;
6) 1 tsp salt, 1/6 tsp chicken broth mix, 2 tbsp light soy sauce, 1 tbsp premium light soy sauce, 2 tbsp dark soy sauce, 3.5 cups water;
7: 1 tbsp freshly fine chopped green onions.
Directions:
1: Ahead of time soak mushrooms and dried scallops in cold water, respectively, until soft about a few hours, rinse with water and slice mushroons (Picture 1). Cut the sausages into thin slices (Picture 2), set aside. Peel off the skin of small taros and cut into small pieces.
2: Add 1 tbsp avocado oil into InstantPot pressure cooker. Select “Sauté” with high temperature, sauté 2 tbsp chopped green onion, sausages, sliced mushrooms and scallops (Picture 3), for a few minutes (Picture 4).
3: Add both rinsed and drained rice and diced yucca root. Then add all ingredients of Ingredient 6) (Picture 5), mix well. Cover the lid and make sure the pressure valve is in the “Seal” position. Select “Rice” to start the program.
4: When the InstantPot program is done, wait another 2-5 minutes. Slowly release the pressure then open the lid. Add 1 tbsp chopped green onion and mix well before serving.
