【Matsutake mushroom and salmon fish stir fry】

This is a very simple, healthy and delicious dish, great for a busy family.

Cook time: 5 minutes

Serves: 5 servings
Ingredients:
1) 550g skinless salmon fillet, center cut, ¾ tsp salt, 1/6 tsp ground white pepper, 2 tsp corn starch;
2) 20 dried and sliced matsutake mushrooms, soaked, rinsed and drained;
3) 2 tbsp Avocado oil or other cooking oil, 2 sliced fresh ginger, 1 tbsp freshly chopped green onion, 1 tbsp minced garlic, 4 dried chili pepper;
4) 1 tbsp primum soy sauce, ½ tsp sugar;
5) ½ tsp sesame oil .
Directions:
1: Rinse salmon with cold water and pat dry with papertowel, slice into 4 mm thick pieces (Picture 1), place them in a clean bowl, add all the rest ingredients of Ingredient 1), mixt well and let stand for 10 minutes (Picture 2).
2: Non-stick sauté pan on medium-high heat, add 2 tbsp oil, sauté sliced ginger, chopped green onion, minced garlic and dried chili pepper for 30 seconds (Picture 3), add matsutake mushrooms, stir and cook for 2 minutes (Picture 4).
3: Add sliced salmon, stir and cook for 1-2 minutes (Picture 5), add 1 tbsp primum soy sauce and ½ sugar, stir to mix.
4: Add ½ tsp sesame oil, gently stir a few times, transfer to a serving plate and serve.
