【Chinese salt and pepper biscuits】

Chinese salt and pepper biscuit, called Shaobing, is very popular breakfast dish in China. You can try this at home, very light and flaky.

Serves: 10 servings
Ingredients:
1) 1¾ cups all purpose flour (280 g), unsifted;
2) ¾ cup + 4 tsp lukewarm water (200 g), 1/2 tsp sugar, 1¼ tsp fast rising yeast , 2 tsp all purpose flour;
3) 1 tsp corn oil;
Oil paste:
4) 3/4 cup – 2 tsp unsifted all purpose flour (110g), 5 tbsp corn oil (67g);
Green onion and pepper filling:
5) 2 green onion finely chopped;
6) 1.25 tsp salt, ¼ tsp chicken broth mix;
7) ¾ tsp ground Sichuan peppercorn;
Others:
8) ½ cup white sesame seeds;
Directions:
1: Dough: Combine all ingredients of Ingredient 2) in a container, mix well and let it stand for 10 minutes. Pour this yeast water mixture into the Ingredient 1), combine to form a dough. Add 1 tsp corn oil, knead for a minute (picture 1). Cover with a damp cloth and set aside in a warm place until it doubles in volume.
2: Oil paste: Combine all ingredients of Ingredient 4) in a small container, mix well with a spoon (picture 2), cover and set aside.
3: Shaobing: On a light floured working surface, shape the dough into a log, then roll out into 3-4 mm thick rectangle, smooth on oil paste (picture 3). Fold the dough twice: fold the left third to center and right third to center (picture 4). Turn 90 deg roll out into a 3-4 mm thick rectangle.
4: Scatter 1.25 tsp salt, 1/4 tsp chicken broth mix, ground Sichuan peppercorn and green onion evenly (Picture 5). Fold from bottom to top to form a slender roll (Picture 6).
5: Cut into 10 equal portions (picture 7), dip each roll into the sesame seeds (picture 8), take out and turn upside down (sesame side up), press and roll into a 6×10 cm rectangle (picture 9). Repeat for the next 9 portions.
6: Preheat the oven to 400F/205C, place Shaobing on parchment paper lined baking sheet (picture 10). Bake for 18-20 minutes until the surface turns light brown. Broil for 2-3 minutes if needed. Serve warm. Yummy!!
