水晶虾饺

我们家都很喜欢广式小点,特别是虾饺。餐馆做的比较油腻,自己做来吃更健康。
用料:
1:虾600g,去壳洗净,切小丁备用。
2:鸡蛋清1只, 1/2 茶匙盐,1大匙葱花,鸡精1/3茶匙,绍酒1茶匙,姜丝1茶匙,鱼露2茶匙,百胡椒1/8茶匙,生粉1大匙,香油2茶匙。
3:荸荠9个,去皮洗净,切小丁备用。
4:虾饺粉一包300g,开水1.5杯。
5:玉米油适量。
做法:
盆内放1-3料,用一双筷子顺一个方向搅拌上劲,放冰箱静置1小时。
另取一盆放入虾饺粉,盛出2大匙做防粘的手粉用。边用筷子边搅边将开水1.5杯倒入面粉里。往手上到点玉米油,揉成均匀的软面团。盖上湿布醒10分钟。把醒好的面团分成小块,用手搓成直径3厘米的球。压扁擀成一个圆薄饼,加2茶匙馅料,从右到左把两面打点摺捏一块包成饺子就行了。
大蒸锅将水先烧开,将包好的虾饺底部沾点玉米油,放盘上大火蒸8分钟。
