沙茶鸡块

用料:
1：鸡腿（Chicken drum stick）8只，800克（或直接用去骨鸡腿肉600克），洗净沥水剔骨，切小块。
2：万字牌生抽酱油2大匙，绍酒1大匙，白胡椒粉1/8茶，牛头牌沙茶酱1大匙，香油2茶匙，生粉1大匙。
3：万字牌生抽酱油1大匙，金兰老抽1大匙，糖1茶匙，水2大匙。
4：菜籽油2大匙。
5：葱1条洗净切段，姜3片。
6：香菜1棵，洗净取叶。
做法：
将鸡肉片拌上2料腌30分钟。不粘炒锅置炉上开大火，内放菜籽油2大匙，将腌好的鸡肉块放入划散炒至外皮稍有微黄，加入葱段和姜片及3料同炒1分钟，撒下香菜叶兜炒几下，即起锅装盘。这样炒出的鸡非常嫩滑。
