福建肉松

LG的外婆是福州人,烧得一手好菜。十几年前倒是跟LG去过福州,享受了不少她老人家的好菜。可惜那时年轻,没跟她学学。她老人家现在已在天国,没有愁烦了。这款福建肉松是LG百吃不厌的食物之一。成品又香又酥,配白粥,烧饼和馒头真是好吃。
用料:a: 猪前腿瘦肉1200g,洗净切3-4厘米大块。b: 生抽酱油4大匙(万字牌酱油)c: 鸡粉1茶匙,盐0.5茶匙。糖1.5茶匙。d: 玉米油1杯
做法:大锅内放1.5杯水和切好的大块猪肉放炉上,开大火煮至滚。开中小火焖煮两小时后,加b和c拌匀,煮至快干。分两份。大炒锅放至炉上,开中火放入一半煮好的肉,边炒边用炒勺揉拌炒至肉完全干松,大约半个小时。看看炒好的半成品。
然后一边加入玉米油0.5杯,一边不停翻炒肉松至金黄色,盛出冷凉即成。看看炒好的成品。
将另一半煮好的肉照同样步骤加工好。待肉松完全冷凉,可装入干净瓶中放冰箱存储。
