腰果鸡丁

鸡丁嫩滑,腰果脆香,很好吃。
用料:
1:鸡胸肉350克,洗净沥水切丁。
2:盐1/3茶匙,生粉1大匙,水2大匙。
3:西芹100克撕去老筋,洗净切丁。
4:橄榄油2.5大匙,姜丝1茶匙,李锦记旧庄特级蚝油1.5大匙,盐1/4茶匙,白胡椒粉1/6茶匙。
5:烤熟的腰果100克,不带盐的。
6:生粉0.5茶匙加水1.5大匙拌匀,香油1茶匙.
做法:
鸡丁拌入2料,用手抓捏均匀(图A),最好放冰箱密闭过夜。西芹丁用开水烫一下,冲冷水沥水备用。不沾锅放橄榄油2.5大匙,置炉上开大中火。
先炒香姜丝(图B),然后下鸡丁翻炒至5成熟(图C),放入西芹丁翻炒几下(图D),然后放入剩余调料4炒匀(图D),接着倒入腰果和所有6料兜匀即可出锅。
