【Bitter melon and egg stir fry】

Serves: 4 servings
Ingredients:
1) 2 bitter melon 350g;
2) 1 tbsp Avocado oil or other cooking oil;
3) 1 tbsp freshly chopped green onion, 1/3 tsp salt, 1/6 tsp chicken broth mix, 1/6 tsp ground white pepper;
4) 2 extra large eggs, 2 tsp premium soy sauce, ¼ tsp salt;
5) 1 tsp sesame oil.
Directions:
1: Peel off bitter melon skin, cut the melons lengthwise in half and scoop out both the seeds and any pith (Picture 1). Cut into 4 mm strips (Picture 2), set aside. Beat eggs well with all ingredients of Ingredient 4) (Picture 2), set aside.
2: Plugin the Ropot cooker, press the Power button to turn on the cooker for preheat, add 1 tbsp oil, chopped green onions, sliced bitter melon and all the rest ingredients of Ingredient 3) to the pot. Close the lid, press the Function key to select the Sauté function (default 3 min), after 3 seconds count down and the program starts, press + sign to increase time by 1 min (Picture 4).
3: When Sauté program runs at half time, open the lid from side, pour beaten egg to the pot quickly (Picture 5). Close the lid and let the program continues.
4: When the program ends, open the lid, add 1 tsp sesame oil and press the Toss key, after 15 seconds, toss stops, remove the pot and transfer cooked dish to a serving plate and serve.
