【Scallion meat flatbread-Shaobing】

Shaobing (shāo bǐng), is a type of baked, layered flatbread in Chinese cuisine. Shaobing can be made with or without stuffing, and with or without sesame on top. Shaobing contains a variety of stuffings that can be grouped into two main flavors: savory or sweet. I made these with meat filling, very delicious.

Ingredients:
Dough:
1) 1 and 3/4 cups unsifted all-purpose flour (280g),;
2) ¾ cup + 1.5 tbsp luckwarm water (205 g), 1¼ tsp fast rising yeast ;
3) 1 tsp corn oil or avocado oil;
Oil paste:
4) 3/4 cup unsifted cake&pastry flour (110g), 5 tbsp corn oil (67g);
Others:
5) ½ cup white sesame seeds;Meat filling:
Meat filling:
6) 300 g extra lean ground pork;
7) 10 green onions, roots removed, rinsed and chopped, 1 tsp freshly mince ginger;
8) 1 tbsp light soy sauce, 1 tbsp premium soy sauce, 1 tbsp dark soy sauce, 2/3 tsp salt, 1 tbsp sesame oil, 1/4 tsp chicken broth mix, 1/4 tsp thirteen spice powder or white pepper powder, 1 tbsp corn starch, and 2 tbsp cold water。
Directions:
1: Dough: Combine all ingredients of Ingredient 2) in a container, mix well and let it stand for 10 minutes (picture 1 right). Pour this yeast water mixture into the Ingredient 1), combine to form a dough. Add 1 tsp corn oil, knead for a minute (picture 2). Cover with a damp cloth and set aside in a warm place until it doubles in volume.
2: Oil paste: Combine all ingredients of Ingredient 4) in a small container, mix well with a spoon (picture 3), cover and set aside.
3: Meat filling: Combine all ingredients of Ingredient 6) to 8) in a bowl (Picture 4). Stir in one direction with a pair of chopsticks for 3 minutes, until the mixture is sticky (Picture 5). Set aside.
4: Chinese flatbread (Shaobing): Rub some corn oil onto both hands and working surface, knead the dough for a few times. Divide into 12 equal portions. Press down each and add 1/12 of oil paste (picture 6). Seal the oil paste to form a ball, press down and roll out (picture 7). Roll from one end to form a cylinder shape (picture 8). Turn 90 deg. press down and roll out again (Picture 9). Roll from one end to form a short cylinder (picture 10). Cover with food wrap while working on the remaining portions.
5: Tuck both ends to the center, press down and roll out into a 12-cm circle (Picture 11). Place 2.5 tbsp filling on top (Picture 12) and seal it. Dip the ball into the sesame seeds (picture 13), take out and turn upside down (sesame side up), press and roll into a 10 cm oval (picture 14). Repeat for the 11 portions.
6: When you make 6 portions, plugin the【AirGo】cooker and turn on the power. Use “Function” to select the “Oven” program, set 400F and 20 min., and then press start. When the preheating is done, place 6 Shaobing inside (Pictures 15). Close the lid and let the program continue (Pictures 16).
7: When the program is over, take out the Shaobing and repeat for the rest. Serve warm.
