【Braised chicken in melted sugar and soy sauce】

Serves: 6 servings
Ingredients:
1) 7 chicken drumsticks;
2) 1 red pepper;
3) 8 dried mushrooms;
4) 1.5 tbsp Avocado oil, 4 tsp sugar;
5) 2 stalk green onion chopped into 2.5 cm long pieces, small piece ginger sliced, 5-6 dried chili pepper;
6) 1 tbsp light soy sauce , 1 tbsp premium light soy sauce, 1/6 tsp ground white pepper, ½ tsp salt, ½ cup cold water;
7) 1/2 tsp sesame oil (optional).
Directions:
1: Ahead of time soak dried mushrooms in water until soft, wash and drain. Wash and pat dry chicken drumsticks, cut into 2.5cm pieces set aside. Remove seeds of the red pepper, wash and cut into 1.5 cm pieces.
2: Heat 1.5 tbsp oil in non-stick sauté pan on medium-low heat, add 4 tsp sugar (Picture 1), stir and cook until sugar melted and forms bobbles (Picture 2).
3: Add chicken, turn to high-medium heat, stir and cook for 3 minutes (Picture 3). Add green onion, sliced ginger and dried chili peppers (Picture 4), stir and cook for a minute. Add all other ingredients of Ingredient 6), stir and bring to boil (Picture 5).
4: Add mushrooms and cover with lid and reduce to medium-low heat, simmer for 20 minutes, stir occasionally. Turn to medium-high heat, add diced red pepper (Picture 6), stir and cook until only 1-2 tbsp sauce left.
5: Add 1 tsp sesame oil, stir well. Transfer cooked chicken into a serving plate and serve immediately over some steamed rice.
