【Cilantro and dry shrimp pancake】

I got a few cilantros left in the fridge, don’t want to waste it, I made this easy and delicious Chinese pancake for Saturday’s breakfast. MaoamoGranddad and MaomaoDad loved it. With a cup of Almond mike and some fruits, you are set for a healthy breakfast.

Cook time: 15 minutes

Serves: 4 servings
Ingredients:
1) 4 tbsp dry tiny shrimps (10g), 5 fresh cilantros (100g);
2) 2 extra large egg;
3) 3/4 cup all purpose flour (120 g);
4) 2 tbsp freshly chopped green onion,
5) ½-2/3 tsp salt, 1 tsp sesame oil, 1/6 tsp chicken broth mix, 1/8 tsp finely ground white pepper,
6) 1 cup cold water (240g);
Others:
7) 6 tsp vegetable oil;
Directions:
1: Soak 4tbsp dry tiny shrimps in 1 cup water for 5 minutes (Picture 1). Rinse cilantros well and finely chop them (Picture 2).
2: In a medium bowl, combine two eggs (Picture 3), shimps and wter, and all ingredients of Ingredient 3-4) (Picture 4) and beat well with a fork (Picture 5).
3: Non-stick sauté pan on medium heat, add 1.5 tsp oil. When oil is hot, add each of ¼ amount of the batter at a time and spread out (Picture 6). Cook for 2-3 minutes then turn over (Picture 7). Cook for another 2 minutes until golden brown. Take out the pancakes and keep warm.
4: Repeat for the rest of batter, serve immediately.
