【AirGo- Braised daikon with dried scallops】

A healthy and tasty dish. I used AirGo “Air Fryer” function to make this dish, very easy. To purchase go to: AirGo cooker, with a coupon of maomao25 for $25 off.

Serves: 8 servings
Ingredients:
1) 1 long daikon (1150g);
2) 25 dried scallops;
3) 1.5 tbsp avocado oil or other cooking oil, 2 tbsp freshly chopped green onion, 3-4 slices of fresh ginger, 2 tsp freshly minced garlic, 1/6 tsp ground Chinese thirteen spicy (or ground white pepper), 1.5 tbsp Lee Kum kee Sichuan style broad bean sauce;
4) 1/2 tsp salt, 1.5 tbsp premium soy sauce, 1/6 tsp chicken broth mix;
5) 1tsp sesame oil.
Directions:
1: Ahead of time, soak dried scallops in cold water for a couple of hours (Picture 1), rinse with water and drain. Peel off daikon skin, rinse and pat dry with a paper towel. Cut daikon into 0.5 cm disc and then cut into 4-6 equal-size triangles (Picture 2).
2: Plugin the 【AirGo】cooker, use “Function” to select the “Air Fryer” program, set temperature to 415F and time to 20 min. press “start” to initiate the program. After preheat, open the lid, add 1.5 tbsp oil, chopped green onion, sliced ginger, minced garlic, Sichuan style broad bean sauce and soaked scallops (picture 4), stir a few times and then close the lid.
3: After cooking about 1 minute, open the lid, stir to mix). Add sliced daikon, stir to mix (Picture 5), cover with the lid and let the program continue.
4: When only 6 min cooking time left (or upon when beeping), open the lid, add salt, soy sauce and chicken broth mix (picture 6), stir a few time, close the lid and let the program to finish.
5: When the program ends, open the lid, add 1 tsp sesame oil and stir to mix. Transfer cooked daikon to a serving plate and serve warm with steamed rice.
