【Baby pork loin pockets】

Ingredients:
Dough:
1) 3/4 cup +3 tbsp lukewarm water (225g), ¼ tsp sugar, 1.5 tsp fast rising yeast;
2) 2 cups all-purpose flour (320g), 1 tsp baking powder;
3) 2×1 tbsp avocado oil;
Filling:
4) 525g baby pork loin;
5) 4 shallots (185g), 1tsp cooking oil, 2 green onion;
6) 1 tbsp sesame oil, 1 tbsp dark soy sauce, 1 tbsp premium soy sauce, 1tbsp light soy sauce, 1tbsp oyster sauce, 1/4 tsp salt, 1/4 tsp chicken broth mix, ¼ tsp ground black pepper, 1.5 tsp corn starch, cold water 2 tbsp;
Others:
7) 2 x 1 tbsp avocado oil or other cooking oil;
Directions:
1: Dough: Measure flour and baking powder in a medium bowl and combine well. Mix all ingredients of Ingredient 2) in a bowl and let stand for 5 minutes (Picture 1). Pour the yeast water mixture into the flour bowl, and combine to form dough. Add 1 tbsp corn oil, and knead for a few minutes (Picture 2). Cover with a damp cloth and set aside in a warm place until it doubles in volume.
2: Filling: Remove old skin of shallots, rinse with water and then chop finely, finely chop the green onions as well. Use 【AirGo】 “Airfryer” program at 400F and 8min. to airfry chopped shallots and 1 tsp oil (Picture 3). Dice baby pork loin and massage with your hand for a few minutes. Combine diced pork loin and all ingredients of Ingredient 5) to 6) in a bowl (Picture 4) and stir to mix.

3: When the dough doubles in volume (Picture 5), on a lightly oiled working surface, press the dough to a log, and roll out into 3-4 mm thick rectangle. Add 1tbsp oil (Picture 6) and smooth out evenly. Roll into a log (Picture 7) and divid into 16 protions. Press down each disc and roll out into a 12 cm wrapper. Place 2 tbsp filling (Picture 8) in the middle of a wrapper. Fold up along the edge and pinch together to seal (Picture 9). Press down a bit.
4: When you are done with first 8 pockets, plugin the 【AirGo】cooker, use “Function” to select the “Crepe/Naan” program, set temperature to 385F and time to 13 min. press “start” to initiate the program. Bursh the pot with 1 tbsp oil, then place 8 pockets inside (Picture 10), close the lid and let the program continue. Repeat to finish the rest of dough and filling.

5: When only 4-5 min cooking time left (or upon when beeping), open the lid, brush the pockets with some oil (picture 11), turn over (picture 12), close the lid and let the program to finish. When the program ends, open the lid, take out the cooked pockets. Serve warm, very delicious.
