Ingredients:

1) 3 Chinese eggplants (480g);
2) 2 tsp olive oil or other cooking oil,;
3) 2 tbsp freshly chopped green onions, 1 tbsp premium soy sauce, 1.5 tbsp Lee Kum Kee oyster sauce, ½ tsp monk fruit sugar, 1/6 tspchicken broth mix (optional), 1/4 cup water;
4) 1/2 tsp sesame oil.

Directions:

1: Trim stem off from the eggplant, rinse with water (Picture 1). Cut into 1.5 cm thick slices (Picture 2).
2: Plugin the 【AirGo】cooker, add 2 tsp oil evenly and arrange eggplan pieces (Picture 3), close the lid. Use “Function” to select the “Air Fryer” program, set temperature to 420F and time to 12 min. press “start” to initiate the program.

3: After cooking about 6 minutes (or upon beeping), open the lid and turn over the eggplant pieces (Picture 4), add 2 tbsp freshly chopped green onion (Picture 5) and close the lid and let the program to finish.
4: When the program ends, open the lid, add all the rest ingredients of Ingredient 3) (Picture 6). Stir a few times, close the lid and let the program to finish.
5: Stir occasionally during the cooking, when the program complete, add ½ tsp sesame oil and mix well. Transfer cooked eggplant to a serving plate and serve warm.
