 AirGo Squash sticky rice cake

Prepare time: 15 minutes
Cook time: 17 minutes
Level: low
Serves: 9 servings

Ingredients:

1) ½ butternut squash (260g);
2) 1+3/4 cup glutinous rice flour (220g);
3) 1/3 cup (70g) monk fruit sugar;
4): 1 large piece parchment paper.

Directions:
1: Peel off the skin of the squash, remove seeds and cut to thin slices (Picture 1). Place the steam rack inside the InstantPot and fill with 1-cup water. Place a deep dish on the steam rack and put sliced squash inside the dish. Ues high pressure steam for 18 minuts.
2: When it is done, wait for 10 minutes, release the vale and take out cooked squash (Picture 2). Transfer cooked squash to a medium size bowl, add 1/3 cup monk fruit sugar (Picture 3) and mix well. Then add glutinous rice flour to form a smooth dough.

3: Divide the dough into 18 equal protions, form each portion into a small ball by rolling it between your palms. Please them on a parchment paper. Plugin the 【AirGo】cooker, use “Function” to select the “Air Fryer” program, set temperature to 400F and time to 17 min. press “start” to initiate the program.
4: After preheat, open the lid, and quickly place the balls along with the parchment paper inside the pan (Picture 5), close the lid and let the program continue (Picture 6).
5: When the program ends, open the lid, quickly take out squash sticky rice cake to a serving plate, and serve warm or cold.
