【Braised bamboo shoot and pork rib in soy sauce】

Found a package of very good quality dried bamboo shoot and made this pork rib dish, well loved by my family.

 Braised bamboo shoot and pork rib in soy sauce
Prepare time: 15 minutes
Cook time: 100 minutes
Level: low
Serves: 8 servings

Ingredients:

1) 1200g prok back ribs;
2) ½ package dried bamboo shoot slices (75g)
3) 1 tbsp olive oilor other cooking oil, 2 green onion, 10g fresh ginger;
4) 3 tbsp light soy sauce, 1 tbsp premium soy sauce, 1 tbsp dark soy sauce;
5) 2 cups water.

Directions:
1: Soak dry bamboo slices in cold water for a few hours (Picture 1), rinse under cold water then drain, set aside. Remove membrane from the back of the ribs, wash and cut between bones to individual pieces. Remove green onion root, wash and cut nto 1 inch pieces and slice ginger, set aside.
2: Heat 1 tbsp olive oil in a non-stick pot over medium-high heat, sauté chopped green onion and sliced ginger for 30 seconds. Add pork ribs (Picture 2), stir and cook until water evaporates and meat lightly brown (Picture 3).

3: Add all ingredients of Ingredient 4)-5), stir to mix and bring to boil (Picture 4). Reduce heat to low, cover with lid and cook for 30 minutes, occasionally stir a few times.
4: Add bamboo shoot slices (Picture 5), stir a few times and cover with the lid for another 60 minutes, occasionally stir a few times.
5: Remove the lid and turn to medium-high heat. Reduce the sauce to about ¼ cup left (Picture 6), then transfer into a serving plate and serve warm.
