【Crushed Cucumber Salad】

Crushed cucumber salad is a very common cold dish in Chinese families, especially during summer time. It is easy to make, tastes refreshing, and very low in calories.

Serves: 4 servings
Ingredients:
1) 1 English cucumber;
2) ½ tsp salt, 1 tbsp minced garlic;
3) 1.5 tsp olive oil;
4) 1/6 tsp chicken broth mix, 1 tsp balsamic vinegar, 1/3 tsp sugar, 1 tsp sesame oil.
Directions:
1: Peel the cucumber, rinse then cut in half. Cover with plastic wrap (Picture 1). Smack hard the cucumber several times, with the flat side of a cleaver. The plastic wrap prevents splashing of the cucumber juice. Remove the plastic wrap and cut the cucumber into small pieces. (Picture 2)
2: Place the diced cucumber in a bowl and sprinkle ½ tsp salt. Mix with a spoon and let it stand for 25 minutes (Picture 3). Drain off the liquid that comes out from the cucumber.
3: Heat 1.5 tbsp olive oil in a small non-stick sauté pan over high heat. Sauté 1 tbsp minced garlic for 30 seconds then remove from heat (Pictures 4).
4: Add the sautéd garlic and all ingredients of Ingredient 4) to the cucumber bowl and mix well. Chill in the fridge for 1-2 hours before serving.
