【Daikon and shrimp patties】

Ingredients:
1) 1 medium size Daikon 500g, 1 tsp salt;
2) 150g peeled and deveined frozen white shrimp;
3) 1/3 tsp chicken broth mix, 1/2 tsp salt, 1 tbsp sesame oil , 1/6 tsp white ground pepper, ¼ cup finely chopped green onion, 1.5 tsp minced ginger;
4) 1.5 cups all-purpose flour (240g), 1 cup water (240g);
5) 1 extra large egg;
6) 4 cups corn oil.
Directions:
1: Peel the daikon, rinse then shred it. Place the shredded daikon in a bowl and sprinkle 1 tsp salt. Mix with a spoon and let it stand for 30 minutes (Picture 1). Rinse shrimps with cold water, drain and dice. Add diced shrimps into the shredded daikon (Picture 2).
2: Add all ingredients of Ingredient 3) (Picture 3), then add all ingredients of Ingredient 4) (Picture 4) and mix with a pair of chopsticks (Picture 5), set aside.
3: Add one large egg (Picture 6) and stir to mix. In a medium non-stick sauce pot add 4 cups of oil. When oil is hot, dip the flat spoon in the oil and add 3 tbs batter to the spoon (Picture 7) and immerse the spoon in the oil (Picture 8). Fry patties on medium-high heat for a couple of minutes. Remove patties from spoons and continue fry until surface turns golden brown. Repeat for the rest of batter. Drain fried patties on paper towels before serving.
