【Pan fried buns with Tofu mushroom filling】

Ingredients:
Dough:
1) 5 cups all purpose flour (800g) unsifted and packed, 3 tsp baking powder;
2) 2 cups+2.5tbsp lukewarm water (520 g), ½ tsp sugar, 3 tsp fast rising yeast, mix well and stand for 10 minutes;
3) 1 tsp avocado oil or other cooking oil;
Filling:
4) 1 container tofu (850g), 2 tbsp cooking oil;
5) 3 large eggs, 1/3 tsp salt, 1/6 tsp chicken broth mix, 1 tbsp cooking oil;
6) 18 dried Chinese mushrooms, 2 small package dry mung bean vermicelli (70g);
7) 1/3 cup dry tiny shrimps;
8) 1 tbsp avocado oil, 2 green onions. 1.5 tsp freshly minced ginger;
9) 1.75 tsp salt, 1.5 tbsp premium soy sauce, 1.5 tbsp corn starch, ½ tsp chicken broth mix, 1/3 tsp thirteen spice powder, 2 tbsp sesame oil;
Others:
10) 5×1.5 tsp corn oil or other cooking oil, 5×5 tbsp water.
Directions:
1: Ahead of time, soak mushrooms in cold water for a few hours until soft, wash and remove stems, set aside.
2: Dough: Measure flour and baking powder in a medium bowl and combine well. Pour the yeast water mixture into the flour bowl and combine to form dough. Add 1 tsp corn oil and knead for a minute (Picture 1). Cover with a damp cloth and set aside in a warm place until it doubles in volume.
3: Filling: Dice soaked mushrooms and chop green onion (Picture 2). Soak dry mung bean vermicelli in boiling water for a few minutes, drain and dice (Picture 3). Slice Tofu into 3 thick slices and pat dry with paper towel. Plug in the Ropot cooker and put in flat inner pot and press Power button to preheat the cooker. Add 1 tbsp avocado oil, arrange half Tofu pieces (Picture 4). Close the lid, press Function to select Panfry function, program starts. When the program ends, open the lid from side, turn over Tofu (Picture 5). Close the lid, press Function to select Panfry function. Remove cooked Tofu pieces and repeat for the other half Tofu pieces. When cool, dice Tofu pieces.
4: Eggs with 1/3 tsp salt, 1/6 tsp chicken broth in a bowl, mix well. Add 1 tbsp avocado oil to the cooker, pour in egg mixture (Picture 6). Close the lid, press Function to select Stirfry function, when 3 seconds count down finishes, press – sign and decrease time to 2.5 minute, program starts. When it is done, remov cooked eggs and dice (Picture 7). Add another 1 tbsp oil to the pot, add chopped green onions, minced ginger, diced mushrooms and tiny shrimps (Picture 8). Close the lid, press Function to select Stirfry function, when it is done transfer to a big bowl.
5: Add diced eggs, tofu and mung bean vermicelli to the bowl and all ingredients of Ingredient 9) (Picture 8), combin and mix well for the filling.
6: Buns: When the dough has doubled in volume, gently knead a few times then divide into 4 equal portions. Shape each into a 2-cm diameter log and cut into 8 discs. Press down each disc and roll out into an 10-12 cm wrapper (Picture 10). Place 2.5 tbsp filling on top. Fold up along the edge to form pleats and pinch together to form a bun (Picture 11). Repeat to finish the rest of dough and filling. Check our the video for how to make Bao Zi.
7: Place 6-7 buns in the flat inner pot (Picture 12) of Ropot cooker with 1.5 tsp oil in it, cover and let them standard inside an oven for 30-45 mintues until volume increases by 50%. Place rest of buns on a parchment paper lined baking sheets. Let them stand inside an oven for 30-45 minutes until volume increases by 50%.
8: Press the Power button preheat the cooker, place the flat bottom inner pot inside the machine. Add 5 tbsp cold water (Picture 13) and close the lid, when 3 seconds count down finishes, press + sign and increase time to 7 minutes, program starts.
9: When the program ends, open the lid, remove the pot and transfer cooked buns to a serving plate and serve. Yummy!! Repeat steps 8-9 to cook the rest of buns.
