【Stir Fried Shrimp with Mushrooms】

This is a quick and easy, but very delicious dish. It goes well with rice and noodles.

Cook time: 10 minutes

Serves: 4-6 servings
Ingredients:
1) 1 bag of fresh tiger shrimp (545g);
2) 1/3 tsp salt, 1/6 tsp white pepper powder, 2 tsp corn starch, 1 tsp sesame oil;
3) 2 packages of Shimeiji mushrooms, 1 white and 1 brown (150g each), mushroom base removed, rinse and pat dry;
4) 2 tbsp olive oil, 1 tbsp freshly chopped green onion, 1 tsp freshly minced ginger, 1/3 tsp salt, ¼ tsp sugar, 1/8 tsp white pepper powder, 1.5 tsp oyster sauce;
5) 1 tsp sesame oil.
Directions:
1: Remove shell and devein the shrimp, rinse with water and drain well. Add in all ingredients of Ingredient 1) (Picture 1), mix well and set aside for 20 minutes.
2: Non-stick frying pan on medium-high heat, add in 1.5 tbsp oil. When oil is hot, add in shrimp and sauté until shrimp starts to turn red. Remove from the pan and set aside.
4: Add half-cooked shrimp and sauté for another minute. Add 1 tsp sesame oil, mix well and transfer to a serving plate before serving. It is great to serve this dish with rice.
