【Shrimp with Steamed Egg】

This is a nutritious but low calorie dish that kids and elderly will love. The steamed egg is tender and smooth, well worth the effort.

Prepare time: 10 minutes
Cook time: 18 minutes
Stand time: 20 minutes
Level: Medium
Serves: 1 serving

Ingredients:

1) 4 medium or large size tiger shrimps;
2) 1/8 tsp salt, 1/12 tsp white pepper powder, 1/4 tsp corn starch, 1/4 tsp sesame oil;
3) 1 extra large egg, 1/3 tsp salt, 150 ml lukewarm water;
4) ½ tsp sesame oil, ¼ tsp freshly minced green onion, ½ tsp light soy sauce (optional).

Directions:

1: Remove shell and devine the shrimp, rinse under water and drain. Cut shrimp into small pieces and add all ingredients of Ingredient 2), mix well and set aside for 20 minutes (Picture 1).
2: In a small bowl, add an egg and 1/3 tsp salt and beat with a fork. Slowly add 150 ml lukewarm water (Picture 3) and mix well.

3: Remove all bubbles on the surface with a flat strainer or a spoon (Picture 4). Slowly pour the egg and water mixture into a serving bowl (Picture 5). Cover with plastic wrap and poke a few holes with a toothpick (Picture 6).
4: Add 1L of water in a steamer. When water is boiling, place the bowl in the steamer and steam for 10 minutes on high heat (Picture 7). Remove the plastic wrap and gently place the shrimp pieces on top of the egg. Cover with another piece of food wrap and again poke a few holes. Continue steam for another 8 minutes on high heat.
5: Add all ingredients of Ingredient 4) before serving.
